🥬Stuffed Cabbage Soup 🥬
(makes 8 servings)
- 2 Tbsp olive oil
- 1½ pounds lean ground beef or turkeyÂ
- 4 cups (350 grams) chopped green cabbage (about 1 medium cabbage)
- 1 large onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 Tbsp Italian seasoning
- 1 tsp sea salt
- ½ tsp ground pepper
- ÂĽ tsp hot sauce
- 14 oz (396 grams) can diced tomatoesÂ
- 14 oz (396 grams) can crushed tomatoes
- 3 cups (700 ml) low-sodium chicken or beef brothÂ
- ½ cup (90 grams) uncooked brown rice
Heat the olive oil in a large soup pot over medium-high heat. Add the beef/turkey and cook, stirring often until it’s cooked through, about 6 minutes.Â
Add the cabbage, onion, carrots, and celery, and cook until the onion softens and begins to become translucent, about 5 minutes – stir often.
Add the Italian seasoning, salt, pepper, and hot sauce. Stir in the tomatoes and broth and bring to a boil. Stir in the rice and reduce the heat to low. Cover and cook until the rice is done, about 35 minutes. Taste and adjust seasonings before serving.
