Trusted by 1000+ Fox Valley residents who wanted results without the misery of another diet plan
You already know what to eat. That was never the problem.
Every nutrition consultation starts the same way. Someone walks in, sits down, and explains the last five or six diets, meal plans and fitness apps they have tried. Keto. Whole30. Weight Watchers. Noom. Intermittent fasting. A calorie tracker that felt like a second job. Each one worked briefly, then quietly stopped working, and the weight came back plus a few extra pounds each time.
The pattern is not personal. It is structural. Almost every mainstream nutrition plan is built for someone who is not you. The 25-year-old with a flexible schedule and no kids. The person who does not travel for work. The person whose partner and family will eat whatever they eat. The person for whom “meal prep on Sunday” sounds like a reasonable ask rather than a fantasy.
Nutrition coaching at Higher Level Fitness is built around the opposite assumption. Real life is loud. Schedules are messy. Kids exist. Family dinners exist. Weekends exist. Business travel exists. Restaurants exist. If a nutrition plan does not survive all of that, it is not really a plan. It is a wish list that will quietly fail you inside six weeks.
Our approach is the version that actually works. Simple protein-first framework. Real food, real portions, no forbidden lists. Weekly guidance from a coach who is paying attention. Adjustments as your body and life change. Results measured in months and years, not the two weeks before the wedding.
Everything you need to know, in four principles.
Nutrition guidance does not need to be complicated. In fact, complexity is usually a warning sign. Four simple principles cover more than 90% of what actually moves the needle for adults 40+.
Protein At Every Meal, Non-Negotiable
Adults 40+ are almost universally underhitting protein by around 30%. Fixing this alone, with no other changes, often moves the scale in the first two weeks. Target 0.7 to 1g per lb of bodyweight, spread across the day. Not one big steak dinner.
Real Food, Not Diet Products
Diet shakes, low-fat everything, artificial sweeteners, ultra-processed “health” foods. Almost none of them work in the long run. Regular food, cooked at home, with a sensible plate structure, does. The diet industry has been lying to you for thirty years.
Room For The Foods You Love
A nutrition plan that eliminates wine, chocolate, pizza, or your grandmother’s Sunday roast is a plan you will quietly quit inside a month. Sustainable coaching makes room for these things and works around them, because the alternative does not last.
Consistency Beats Perfection, Every Time
A nutrition approach followed 80% of the time for two years will change your body more than a strict plan followed 100% of the time for six weeks. Every client we have seen keep the weight off did it the first way. That is the game.
Nutrition coaching is one pillar of the Higher Level Reset Method™.
Nutrition alone will move the scale for a while. Nutrition combined with coached training and daily accountability is what makes results actually stick. This is the framework behind every client transformation.
Coached Strength, Three Times A Week
Diet-only fat loss shrinks muscle alongside fat, which drops your metabolism and sets you up for the rebound. Coached strength defends your muscle, keeps your metabolism supported, and ensures the fat you lose stays gone.
Nutrition That Fits Real Life
The service page you are reading right now. A simple protein-first framework, no meal plans, no forbidden foods, weekly guidance from a coach who is paying attention. Sustainable from week one.
Daily Accountability
Regular check-ins with a coach who notices when Wednesday is starting to slide. This is what stops a rough day becoming a rough week and a lost month. It is also the specific piece almost every previous plan you tried was missing.
If two or more of these hit home, nutrition coaching is exactly what you have been missing.
These are the specific lines we hear from Fox Valley residents in first-time nutrition consultations. If they resonate, know this: the pattern is not personal. The plans you tried were built for someone else.
- ✓You have tried Keto, Whole30, intermittent fasting and calorie counting, and each one worked for a bit before quietly stopping.
- ✓You know what you should probably be eating. You just cannot make it stick when Friday rolls around.
- ✓Meal prep on Sunday sounds nice in theory. In practice you do it twice and quietly give up.
- ✓You have a family who will not eat the diet food you are trying to force yourself onto.
- ✓Weekends undo whatever weekday discipline you managed to hold together.
- ✓You have downloaded three fitness apps in the last two years and used each one for about a fortnight.
- ✓Every diet you tried had at least one food you love permanently on the forbidden list.
- ✓You have tried weight loss injections or considered them, and quietly worry about the muscle loss side effects.
- ✓Business travel or family holidays reliably derail whatever plan you were following.
- ✓You are tired of tracking every calorie and want a framework that does not require a spreadsheet.
- ✓You want to lose weight but you also want to enjoy the occasional glass of wine and slice of cake.
- ✓You are ready for a real coaching relationship, not another download-and-figure-it-out-yourself plan.

Hristo Hristov is a Fitness and Nutrition Expert and the founder of Higher Level Fitness in St. Charles, Illinois. Through the studio and the Higher Level Reset Method™, he has personally coached over 1,000 men and women through structured fat loss and nutrition programs, working almost exclusively with adults 40 and over.
The nutrition coaching model at Higher Level Fitness is deliberately unlike any diet plan you have followed. There is no PDF you download and have to follow perfectly. There is no forbidden food list. There is no shame at check-ins when the week did not go to plan. There is a coaching relationship, weekly guidance, and a simple framework that works around your real life.
If you have been on the treadmill of diet plans for years and you are ready for something that finally works, Hristo is the coach who built the alternative. His track record is Fox Valley residents who lost the weight, kept it off, and rebuilt their relationship with food while doing it.

Fox Valley residents whose relationship with food actually changed.
Stephanie: 18 lbs down and finally in control of her food.
Stephanie had tried the standard diet options and quietly given up on each one. Nutrition coaching changed the internal conversation. Eighteen pounds down, but more importantly, she describes finally feeling in control of her food for the first time in years. That kind of internal shift is what keeps the weight off long after the coaching finishes.
Marie: 28 lbs down and eating without the guilt.
Marie M made the drive in from Batavia and lost 28 lbs across the program. What she talks about most is not the number, though. It is that she can sit down to a family meal without the guilt or the internal calculation of what she is “allowed” to eat. Nutrition coaching taught her what no diet plan ever had.
Karen: 49 lbs gone and food finally makes sense.
Karen came in from South Elgin and dropped 49 lbs across her time in the coaching program. The scale numbers were dramatic. The transformation in her relationship with food was arguably bigger. She reports feeling like she got a version of herself back that she had assumed was gone permanently.
What you get, beyond a meal plan PDF.
Nutrition coaching at Higher Level Fitness is a full support system, not a document you download and try to figure out on your own.
Initial Nutrition Consultation
A structured consultation that maps your current eating patterns, family situation, work schedule and food preferences, then builds a nutrition framework that will actually survive them.
Weekly Coaching Check-Ins
Regular guided check-ins with your coach. What worked this week, what did not, what to adjust for next week. This is the piece that catches drift before it becomes a lost month.
The Protein-First Framework
The simple four-rule framework that covers 90% of what actually moves the needle. Not a meal plan. A way of thinking about food that scales to any situation.
Restaurant & Travel Guidance
How to eat at Fox Valley restaurants, at family gatherings, on business trips, and on holiday without derailing the plan. Because these things happen and the plan has to survive them.
Coach Support Between Sessions
A coach in your corner between check-ins. Quick questions answered, drift caught early, and the daily accountability that makes the difference.
Supplement Guidance
A small vetted range of supplements that support nutrition goals. Optional, never pushed, and only recommended when they actually make a difference.
Coaching slots are intentionally limited.
Every nutrition client gets genuine weekly coaching, which means we cap how many clients we bring on. Get in front of the next intake.
What Fox Valley clients want to know before they start.
Do I get a meal plan?
No, and that is deliberate. Meal plans have a terrible long-term track record because real life does not fit inside them. You get a framework you can apply to any meal, at home or out, on a good week or a busy week. That is the piece that works long-term.
Are any foods completely off-limits?
No. The moment a food goes on a forbidden list, most people quietly quit inside a month. The framework we teach makes room for wine, chocolate, pizza, family meals and restaurants. The key is what you do most of the time, not eliminating the things you love.
How is this different from working with a dietitian or nutritionist?
Registered dietitians and nutritionists are medically-focused, often working with people managing specific health conditions. Nutrition coaching at Higher Level Fitness is fat-loss and body-composition focused for otherwise-healthy adults 40+, combined with the training and accountability that make the changes actually stick. Different tool for a different job.
Do I have to track calories?
Not really. The framework is protein-first and portion-aware rather than obsessively calorie-counted. Some clients do use a tracker briefly to calibrate, but the goal is a framework you can eventually run in your head, not a spreadsheet you maintain forever.
Can I do nutrition coaching without joining the training program?
Yes, though the strongest results come from combining nutrition coaching with the 8-Week Fat Loss Program or ongoing training. Nutrition alone will move the scale. Nutrition plus training changes body composition and defends your metabolism. Both are options.
What about GLP-1 medications like Ozempic or Wegovy?
We coach clients who are on GLP-1 medications and clients who are not. Either way, the core nutrition framework matters. On these medications, protein intake is even more critical because muscle loss is a common side effect, and coached strength training becomes essential to preserve lean mass while the medication reduces appetite.
How long does nutrition coaching take to show results?
Most clients see meaningful scale movement in the first two weeks simply from correcting the protein target and building a sensible plate structure. Bigger changes in body composition and energy show up across weeks four to eight. The long-term work is turning the framework into habits, which typically takes three to six months.
